chicken kievs – something that never blessed my childhood i heard about them, i saw them in the school canteen – but they’re reformed chickeniness never attracted me to them but a surplus amount of wild garlic butter had me thinking - wouldn’t a home made chicken kiev be a wonderful thing? A quick nosey about revealed that many people now shy away from the pre made variety – and are inclined to whip one up from scratch! and why shouldnt i! a little bit messy & fiddly – but not hard, and very rewardingly scrummy chicken kiev   2 chicken breasts ( mini fillet attached ) 50g plain flour 80g bread crumbs 40g sesame seeds ( i premixed these with breadcrumbs ) 1 whisked egg olive oil for frying wild garlic butter first detach the mini fillet from the main chicken breast then cut pockets in the chicken breasts – starting at the fat end of the breast – and being careful not to cut through the breast then comes a fun bit!!! cover with clingfilm & bash em all out flat! but dont bash too thin or you will give you chicken breasts holes! stuff the pockets with the wild garlic butter – i put LOADS in – but this is up to you this is where your mini fillet comes back in handy – you tuck the little baby on top of the garlic butter – and fold the breast back over it! then another fun, but a little messy bit! coat the kievs in flour, then egg, then breadcrumbs & sesame seeds, then the egg, and then the breadcrumbs and sesame seeds again! it is important to make sure the kievs are well cover! keeps the garlicy goodness in gently lift the kievs and pop into a hot oiled pan to shallow fry on both sides for 2 – 3 minutes once browned – pop into dish & off into a preheated oven @ 200 / 180 fan for 20minutes when you take them out of the oven – DONT PANIC – i paniced! as you can see from the piccie – it looks like all of my wild garlic butter has escaped!!!!! – but fear not – however it may look – it hadnt! My kievs where still gorgeous & moist and garlicy nom nom nom! M tells me it was one of the best meals ever! I was very impressed – super yummy! the sesame seeds with the breadcrumbs even make it seem a little on the healthy side! highly recommended     this lovely recipe is currently taking part in mis helen’s full plate thursday be sure to pop over and check out some of the great recipes!

the end of the wild garlic

on saturday – while staring off into the distance – i suddenly realised – the time had come for the end of the stocks of wild garlic!!!!! so as soon as i got home, i scavenged the remaining, remotely healthy looking leaves and a block of butter and set about stretching out some of the gorgeous wild garlic’s life span! i made some wild garlic butter i used one big handful of wild garlic – and one big block of butter – play about thought – its a personal thing! I like to leave bits of greeeeen through the butter looks nicer and boy was it yummy with our steaks that nice! so fresh and bright tasting! ( forgive the terrible steak photo – half way through chowing on down I suddenly remembered I should probably take a piccie ) and boy was it yummy with our steaks that night! so fresh and bright tasting! ( forgive the terrible steak photo – half way through chowing on down I suddenly remembered I should probably take a piccie ) ( and yes – i used alot – what can i say – i got carried away! ) in my mad frenzy to use some of the depleting wild garlic stocks i also made some more wild garlic pesto – this time with 100g of rocket instead of 50g of spring onions as you would guessed it – the rocket is some what over powering – but i think i like it – wont be sure till i whip up a pasta dish with it later in the week

fab wild garlic!

wild garlic and bluebells

I am very lucky to have an insane amount of wild garlic surrounding my home and it looks so pretty along side the bluebells! And the powers that be reliably inform me it is generally in abundance till mid/end of July! Oh I am excited I have already made some yummy wild garlic pesto ( recipe to follow ) and am looking forward to concocting a few more things before this natural wonder disappears!
