Well hello there lovely!

Are you a food addict? Who wants to know the whole story about your grub, from field to fork? And maybe likes wine a little too much!? Maybe you’re trying to find a way to slow your life down a little? Yet still wanna cram in ALL of the adventure!?

However you found me – I’m pretty sure we are gonna be friends ♥

I am Laura. And I am addicted to food. But don’t worry; my food addiction isn’t the only thing I have to offer! I’ve justentered my 30’s and am not missing my 20’s one bit. I have given into my life long desire for slow living in the countryside, and am currently residing in the middle of a field with my boyfriend and a whole host of fluffy companions. That passion for country living can only be trumped by my ongoing quest to discover new things. Meaning you won’t only find snippets of how I am choosing a slower, more thoughtful life – but also moments of untethered adventure! You’ll find everything from an interesting selection of home crafted recipes; varying from easy midweek dishes to nose to tail eating, posts about my travels; home and abroad, country living; including the furry folk, and even some tips on embracing each season as it comes.

Some of my favorite things in life are – dipping my toes in the ocean, creating brand new recipes, animals ( we have a few! ), the Spanish countryside, and sunrises.

A few things that are important to me are – making time for myself, and the special people that surround me; supporting our local producers; animal welfare and trying to remember to slow down.

 

What a whirlwind!

When I created Day Dreaming Foodie in 2011 with this post about rhubarb I didn’t know how this online den would grow. It’s eventually led to me being offered ( and jumping feet first into ) my dream job. So now I don’t just get to talk about ethical, local food on my online journal – but I also spend my days champion Irish produce at Indie Fude. I’ve also been lucky enough to work with some wonderful brands here on Day Dreaming Foodie; including Joules, Marks and Spencer’s, Fife Tourist Board, Leisure and Alpro. One of my recent favourites is a multiple post campaign for National Bread week; where I developed a number of recipes including this beautiful Chorizo & Cheese Sourdough Stuffing. In September 2017 I was honoured to be a judge at the Blas na hEireann Irish Food Awards.
