Rhubarb is in abundance in our household at this time of year. When Mum and Dad bought their house, many moons ago – they inherited a large rhubarb patch. Over the years we have gradually increased our rhubarb repertoire from stew rhubarb and crumble to things a bit more exotic. This year saw my first venture into rhubarb curd, and shortly after – this rhubarb and strawberry vodka!
Rhubarb and Strawberry Vodka
Ingredients
- 1/2 Cup Brown Sugar
- 1/2 Cup White Sugar
- 2 Cups Quartered Strawberries
- 2 Cups Sliced Rhubarb ( approx 1inch long)
- Approx 500ml Vodka
Method
- Add the sugars to the bottom of a 1litre kilner jar.
- Follow with the Strawberries.
- And then the Rhubarb.
- Top up with vodka.
- Leave for approx a week - shaking on occasion to mix up the flavours!

The use of sugar is entirely up to you – especially if you intend to use the vodka as a mixer with lemonade, or other sweet beverage. I am plotting some cocktails in my future, so added a mix of both brown and white sugar. The vodka is up to you too. I must admit that I only selected the Absolut because the bottle cried out to me. Check out the label! Photogenic much?! And I am sure the recipe would work well with other spirits, I had thought of gin to start with. But I settled on vodka due to its ability to take on flavours – who knows, maybe it’ll be rum next 😉
