Today has been a day of recovering so far – my little sister got married on Friday, and with so many visiting family members etc it was a long weekend. Very pleasurable but long!
Therefore, I have done little so far, and intend doing little for the remainder of the day. Only straining my little arms and legs to engage in my favourite activities. First – popping on a slow cooked beef curry for tea. Second – walking one of my favourite friends. Third – Whipping up a batch of cookies!
And on such a lazy day – they had to be lazy, yummy and involve not toooo much oven time. My brain isnt at its best – timings wouldnt be good for me! A No Bake Cookie is ideal for such a day. And even better if it can be full of goodness!
Almond Butter No Bake Cookie
100g white sugar
60ml whole milk
70g almond butter ( I used Keen Almond Chocolate, it is super lush )
1) Add butter, sugar & milk to a medium saucepan – heat until the sugar is disolves & boil for one minute
2) Add almond butter & stir until it melts through
3) Add oats & combine
4) Place spoonfuls of mixture onto parchment, and gently flatten – leave to cool
The cookies will harden as they cool, but still have a soft sumptuous texture. Simply to die for, especially with a big glass of milk! I made about 8 medium sized cookies from this mix. Possibly not enough since 4 have gone already….. Feel free to play with the recipe – any kind of nut butter will work well. And perhaps add some cocoa or some raisins? You may need to slightly adjust the amount of oats though, but once you’ve made them once you’ll know what texture to head for!
And they have made it into my book of recipes – a keeper for sure! I have a few other keen nut butters stashed in my fridge, with only a little left. I am already plotting Almond & Vanilla butter No Bake Cookies – and must get my hands on some Pecan butter to try them with!
