As you may know from my last post – I am lucky enough to have LOADS of wild garlic within easy access! And am currently trying to work my way through it – preserving as much as possible in anyway I can keep it for as long as possible!
The best way, I can tell so far – is yummy yummy garlic pesto!
( this recipe made me 3 and 1/2 little jars )
100g wild garlic leaves
50g spring onions
50g walnuts ( you could use any sort of nuts but i like these best! )
200g olive oil
50g hard cheese ( i used pecorino – but parmasan would do fine )
firstly measure out all of your ingredients
then roughly chop the wild garlic and spring onion
pop the walnuts, wild garlic & spring onion into a saucepan with the olive oil
and blitz it all up together! I used a hand blender 🙂

I choose the cheese as it is my fav! you could use any hard cheese at all – but you may need to add some salt ( half a teaspoon ) with parmasan
I am dying to try it with a hard goats cheese!
ah voila! done! perfect wild garlic to pesto to enjoy as you wish!
I can not wait to start using it! have to think of some scrummy recipes 😀
