Recently I’ve been missing my mojo – I don’t know if its the time of year – or if I just need to set more time aside for play……
But what I do know is its about time I bullied myself outta it! And sugar seems a good start….
So – in a quest to find more exciting ways, than poached & scrambled, to use up all the eggs my feathered friends are gifting me – I decided to have a shot at meringues!
Meringues remind me of childhood ( & my very greedy brother ) so they are certainly a heart warming make – however I have never made my own before! Always relying on mum for my sugar fix!
As usual the search for a great recipe was a long as confusing one – with lots of them telling me to add multitudes of odd ingredients – corn flour?? why??
And since I managed to make lovely crisp chewy mini meringues with just two ingredients… I think its the food gods trying to tell me that you should let the ingredients talk for themselves – & i think my happy chuck fresh eggs did the work for me 🙂
my quantities came from www.bbcgoodfood.com but the temperatures seemed all wrong! Unfortunately I often have temperature issues – I have always blamed it on my vintage oven which doesnt have a fan to assist it 🙁 however meringues seemed to be his strong point!
I used 1 egg white for every 50g of sugar – which for this recipe was 2 egg whites & 100g of sugar 🙂 it made 20 ickle ones!
the egg whites are whipped till frothy – the sugar added spoon by spoon – and once white, glossy & the mixture doesnt fall on top of your head if you hold it upside down – you have success – though it does take a few minutes – ten or so! ( i dont really recommend doing this by hand – unless you have lovely strong toned muscley arms – itd be super amounts of work & take significantly longer…. )
a large metal spoon was the perfect size to pop my mix onto the parchment it cute little baby meringue shapes!
& into the oven they went – i very cool oven – mine was at 100c & they stayed there for and hour, being turned half way through 🙂 but once the oven is turned off – leave them in there to cool! This is when the chewy inside magicness happens 😀
once COMPLETELY cool i drizzled chocolate over these babies 🙂 major success!
i popped them back in the oven overnight for the chocolate to set – and come morning they where ready to provide me & my buddies with a well needed post jumping sugar fix – perfect 😀
dont worry – the egg yolks havent gone to waste! part 2 of use lotsa eggs will include them in a yummy mayonnaise 🙂
